Specific Skills

Responsible for all pastries including French and bread production for the dining room and all other club functions. Develop French pastry and breadrelated recipes and purchase ingredients. Prepare ice cream, chocolate and candy confection. Bake and decorate pastry items for special events such as buffets and receptions. Supervise pastry station employees. Assist in pastry and dessert budget development.br Hires, trains, supervises, schedules and evaluates all subordinate employee.br Plans, prepares and decorates special pastry items as necessarybr Will have to work overnight and or during holidaysbr Approves the requisitioning of all products and supplies needed to make the bread and pastries..br Ensures that high standards of sanitation and cleanliness are maintained throughout the pastry station at all times.br Establishes controls to minimize food and supply waste and theft.br Safeguards all pastry station employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles.br Develops recipes and techniques for pastry and bread production that help to assure consistent high quality; exercises portion control over bread and pastries items.br Prepares preliminary budget for the pastry station; projects annual food and labor costs; monitors financial results; takes corrective action when necessary to help assure that financial goals are met.br Attends regular meetings with Executive Chef, Food and Beverage Director and other managers and employees.br Develops dessert menu as well as wine dessert menu to pair.br Consults with Banquet Function Committee about pastryrelated aspects of special events being planned.br Evaluates pastry station products to assure that quality standards are consistently attained.br Prepares all baked goods, puddings, candies, chocolate decors,gelatins, frozen desserts,viennoiseries, bread stewed and baked or candied fruits, pies, cakes, pastries, icings, custards, fondants and fillings used in desserts.br Oversees pastry cart and buffet dessert table setup and presentation.br Understands and consistently follows proper sanitation practices including those for personal hygiene.br Performs other tasks as assigned by the Executive Chef, consistent with other listed job duties.
