CERTIFICATE OF APPROVAL IN COFFEE ROASTINGbr br BUSINESS NECESSITY LETTER FOR CERTIFICATE OF APPROVAL IN COFFEE ROASTINGbr br To Whom It May Concernbr Macondo Doral Inc. is a Florida corporation established in 2014 and is listed in the category of Coffee Shop.br The Company specializes in selling the freshest Colombian Coffee with the most affordable market price and quality.br The Company works with a select group of coffee planters, collaborators and providers from Medellin, Colombia.br The Company has had problems in forming an appropriate and professional team of Baristas, many of the reasons due to low professional preparation. This issue has had the following consequences, among othersbr The customers suffer because theyre paying the same price as an expert roaster and getting coffees that are being roasted by someone learning on the fly. Without an adequate baseline of roasting knowledge, the coffee produced can be subpar. This will be offputting for clients, negatively affect our brand, and put our expensive equipment at risk.br Something weve been working on really hard here at Macondo Doral is our Between Batch Protocol. This is important for a constant roast and to minimize defects. Roasters have not been able to ensure our roasting workflow is consistent with regards to stable and correct charge temperatures. To achieve a consistent quality coffee, a roaster needs to identify all the variables at play, so they can be controlled and standardized.br Some common mistakes we have had ultimately are tipping, scorching, baking, and underdevelopment. Those are specific to the actual roasting process. The coffee itself will taste off if any of these have occurred. Ashy, burnt, woody, green, or grassy flavors would be apparent if such a mistake were to be made. Experience, proper staff training, roast profile software, and rigorous quality control will keep the majority of these defects at bay.br The Company expects the Baristas to have experience, technical skills, and be prepared to provide evidence of their knowledge through a Certificate of studies.br The information above mentioned is very sensitive to the purposes of our operation, in this regard it is required that the team of the company is well prepared, with solid knowledgeable and with ability to responds with correct decisions and professional criteria in order to achieve accurate service, with the ability to handle easily and quickly the processes involved. Also due to the weaknesses we have had in the managing area after the pandemic, we do not have the capacity to train new employees for this department.br For these reasons, a person with a Certificate of Approval in Coffee Roasting and three months of experience in Barismo is required for the position of Barista Expert in Coffee Roasting, complying with the following rolesbr Must help the General and Assistant Managers operate the roast bar, with goals to reduce production costs, improve inventory accuracy and predictability, improve roast profiles, and achieve maximum consistency across roasts.br Must serve as a resource for all coffee roasting questions from customers, serving as an inhouse expert.br Must be responsible for roasting samples and hosting cuppings related to the green coffee buying program.br Managing the roasting schedule and work directly with the store to ensure this schedule is adhered to and updated with any changes.br Must have extensive knowledge about Coldbrew preparation.br Must do coffee process demonstrations.br Must bring out the aromas and flavors that are locked inside the green coffee beans, without loss of quality or taste.br Must cause the chemical changes necessary to take place as the beans are rapidly brought to very high temperatures, reaching the peak of perfection and cooling the beans quickly to stop the process.br Regards,br Olga Riverabr General Manager
